On Friday, it was my brother’s birthday and I wanted to give him foodster treat. I thought it would be fun to give him some Confetti Cake Cookies. This recipe is super simple and extremely quick.
All you need is:
1 box of confetti cake mix (really, any kind works)
1 teaspoon of baking powder
2 large eggs
1/3 cup of vegetable oil
1/2 teaspoon of vanilla extract
Preheat the oven to 350 degrees
In a large bowl, mix the cake mix and baking powder. In a separate bowl, mix the 2 large eggs, vanilla, and vegetable oil.
Mix the two together until you have a dough-like consistency.
Drop rounded 1-inch balls of dough on to a cookie sheet.
Bake for 8 minutes.
