Tonight’s dinner was one of the on a whim creative nights. I’ve said it before, cooking with leftovers is one of my favorite things to do. There are endless possibilities with what you can do with them. I had some leftover sweet potatoes from making Sweet Potato Pancakes this weekend. I didn’t measure anything and just kept adding in whatever would make it taste delicious. I’ll give you the basis of what I added to make this soup.
- I had about 1 1/2 sweet potatoes.
- 1 cup of water.
- Cracked black pepper
- Garlic Salt
- Nutmeg
- Butter
- A dollop or two of Heavy Sour Cream.
I had already mashed some of the potatoes but I needed them a little bit more pureed so I threw them in my Magic Bullet.
I started off only adding about a 1/4 cup of water and some butter to the warm pot. Let that simmer and once the butter melted, I added the pureed sweet potatoes.
Periodically, I would add more water when it started to thicken up. In between those times, I added the pepper, garlic salt, nutmeg, and more butter. Keep adding the the spices and butter to your liking. After about 10 minutes of letting this all simmer. I threw in a couple dollops of heavy sour cream – mix that around one more time and serve.
For appearance, add one more dollop.
