Before we started hitting the restaurants, Megan and I began summer with a nice grill out. I had noticed a delicious looking recipe on a friends blog site (1cupawesome.com) for Hawaiian Chicken Kebabs. I invited Megan over and we made a list of ingredients and then headed out to the store. Most of our ingredients were found at Walmart and then we decided to head to Trader Joe’s to pick up some spices that we couldn’t find at Walmart. In the mean time, our sweet tooth was reminding us to get some dessert. We got their Trader Joe’s S’mashing S’mores. If you haven’t gotten these yet, you’re totally missing out. It’s everything you need in one bite. You’ve got the graham cracker, the mallow, and then chocolate covering the whole thing. Put that thing in the microwave for 5 seconds and you have got the most perfect s’more you have ever eaten.

We headed home with our ingredients and began prep. When we got back and we arranged duties for each other and began slicing and dicing the veggies, fruit and chicken. We first started creating the marinade. We altered it a little by substituting the Chinese five spices (we couldn’t find it) with Trader Joe’s 21 Seasoning Salute. Once we completed the marinade we put the chicken in it and let time do its work. During the marinating process we got the fruit and veggie part of the kebab ready. We diced up a fresh pineapple (big knife = scared fingers) and cut up a couple of green peppers. After about 25 minutes of
marinating, we were ready for the grill. They were on the grill for about 14 minuets total. I only flipped then once (directions called for that). While the kebabs were on the grill, we got some brown rice, and french beans ready. It was my first time trying brown rice. I think I would prefer white rice any day. Brown just has a different taste. Once the kebabs were done, we loaded our plates with rice and beans and headed for the deck for a nice dinner on a wonderful night.
I would say that it was a success. We both had a great time helping each other get the meal prepared and we were both satisfied with the final product. Thank you 1cupawesome for the recipe!
